Cocoa Shortcrust Pastry with Pears and Chocolate

It was a long time I wanted to test myself with this cake and finally here it is! I’ve tasted many really good recipes but this is my favourite one because pears are dipped in the chocolate ganache that I love!

For the cocoa shortcrust pastry we need:

375 gr flour
180 gr of butter at room temperature
110 gr of sugar
Lemon peel
Vanillin
½ bag of baking powder
25 gr of bitter cocoa

For the syrupy pears:
2 ripe pears
125 ml of water
75 gr of sugar

For the dark chocolate ganache:
250 of dark chocolate
250 of fresh cream

If you don’t love much dark chocolate you can use 100 gr of milk chocolate, 150 gr of dark chocolate and 250 gr of fresh cream.
Knead all the ingredients for the cocoa shortcrust pastry, shape a ball and cover it with some wrap. Let it stand in the fridge for 30 minutes.
Roll out the dough with the aid of a rolling pin giving it a round shape and let it down in a baking pan covered with some oven paper. Shape well the cake sides and riddle the them and the cake base with a fork so that they won’t puff up while baking. Bake at 180° for about 35 minutes.
In the meantime let’s prepare the syrupy pears: in a small pot let the sugar melt in water, then add the pears and warm for 5 minutes. Let the pears cool inside the syrup and cut them into thin slices.
Now it’s the moment to prepare the ganache. Put the fresh cream and the dark chocolate in a small pot and let them melt blending occasionally. Let it cool. Once the cake base will be cooled pour the first half of the ganache in the cake base. Add the sliced pears and cover them with the second half of the ganache. Let the cake stand in the fridge until the ganache will be set.

Crostata amaretti, gocce di cioccolato bianco e marmellata

Eccomi qua!

- 180 gr di burro a temperatura ambiente
- 110 gr di zucchero
- scorza di limone
- vanillina

Shortcrust Pastry with Amaretti, White Chocolate Chips and Jam

I suggest to enjoy it with a nice cup of hot tea.

375 gr of flour
180 gr of butter at room temperature
110 gr of sugar
Lemon peel
Vanillin
½ bag of baking powder

To garnish:
50 gr of Amaretti biscuits
1 jar of apricot jam
White chocolate chips

Knead all the ingredients, shape a ball and cover it with some wrap.
Let it stand in the fridge for about half an hour. Roll out the dough with the aid of a rolling pin giving it a round shape and let it down in a baking pan covered with some oven paper. Shape well the cake sides and riddle the cake base with holes with a fork.
Chop the Amaretti biscuits thinly and cover the base of the cake with them. Add the chocolate chips and at the end garnish with the jam; I’ve chosen the apricot jam but also Amaretti and peach flavor is a good match. With the rest of the shortcrust dough let’s garnish the cake.
